Originally from Belgium, Meridith spent 4 years working in Africa with the EU and UN on Health development programs before discovering Macao 14 years ago. She joined Sands China Ltd in 2006 at the beginning of its development in Macao and worked over the years across different departments from Human Resources to Finance, and Operations Excellence before taking the lead of the Sustainability team in 2018. In her role, Meridith is responsible for developing and implementing sustainability programs and initiatives to effectively integrate sustainability into the resorts’ practices, procedures, and culture.  She loves working in a multicultural environment in one of the fastest-growing and most vibrant destinations in Asia.

Jonathan Cybulski

Marine and Historical Ecologist

The University of Hong Kong

Jonathan Cybulski is a historical ecologist and science communicator, National Geographic Explorer, Swire Scholar, and Smithsonian Fellow. Jonathan is currently pursuing his PhD at the University of Hong Kong as part of Dr David Baker's coral biogeochemistry laboratory. Jon's job is to tell the story of ecosystems through time - what they were like in the past, how they have changed in the present, and what this might mean for their future persistence. Dana Winograd is the Director-Operations of Plastic Free Seas (PFS), having joined when it started in 2013. She has lived in HK for over 24 years and first got involved with environmental issues in 2007 when she helped drive recycling in Discovery Bay where she lives. Seeing that it would take more than recycling to help solve the problem of plastic marine pollution, Dana joined PFS at its inception to help promote change in people's use of plastic through education and action and has delivered talks on waste reduction and personal behaviour change to students from kindergarten through to university, as well as to adults within their corporate program. PFS has reached over 65,000 students in 175+ schools through in-class, beach and sea programmes, and more than 80 companies over the past 6 years.

Carmen Ng is Director of Sustainability at Langham Hospitality Group. In her role, she leads and drives the sustainability strategy within the Group. She is responsible for a diverse range of sustainability programmes including strategy and policies development, management system, capacity building, stakeholder engagement, communication and reporting. She also believes in sustainability is everyone’s responsibility and her role is implanting this concept like a DNA into every colleague in the company.

Iris Lam is the Director of Food and Beverage, Design and Sustainable Development for Mandarin Oriental Hotel Group (MOHG), and supports the design and development of restaurants, bars, and banquet facilities across the group, working with various stakeholders to translate from conceptual phase into the final F&B operation. Iris actively leads the group’s concerns pertaining to food and beverage sustainability initiatives with a team of likeminded and passionate colleagues.

Anne has over 30 years of experience in environmental and social risk management and due diligence, sustainability strategy development, management and reporting, and stakeholder engagement and training. Through her consultancy firm, Copeland & Partners Limited (established in 2008) that assists companies to integrate sustainability into their operations and to identify and manage environmental and social risks in financial transactions. Anne was an Environment and Social Specialist for the Asia-Pacific region with the International Finance Corporation based in Hong Kong and previously, she worked as a consultant with BMT Asia Pacific, ERM-Hong Kong and the Hong Kong Productivity Council, and with the LURA Group in Toronto and Halifax, Canada. Anne also lectured at the University of Hong Kong for the Master of Science in Environmental Management degree programme and is a partner at ORCA Asia.

Nigel is leading the team of New Life Plastics Limited to develop Hong Hong’s first advanced plastic bottle reprocessing facility being built in EcoPark. Nigel is a Chartered Engineer and Resource and Waste Manager with more than 45 years’ experience and has been responsible for studies, design, finance and project management of numerous resource management schemes in Hong Kong and the United Kingdom.

David Bishop is a founder of Soap Cycling - Asia's first and largest soap recycling charity that works with students, hotels, corporates and volunteers in recycling soap to reduce waste and prevent hygiene-related diseases. David is also a co-founder of the Fair Employment Agency and believes that many of society's largest problems can be addressed through social business, and sharing in the impact is the right and responsibility of the entire community.

Environmental Protection Department

Shirley Yuen is the Senior Environmental Protection Officer (Waste Reduction and Recycling) 2 of Environmental Protection Department.  She is currently responsible for the land support and planning of new recycling infrastructure for the recycling industry in Hong Kong. With more than 20 years of waste management experience in EPD,  Shirley has participated in the planing, development and operation of various refuse transfer stations, and in the managment and control of the construction waste disposal charging scheme. She has also involved in the landfill engagement and betterment work for the three strategic landfills in Hong Kong, and participated in the district liaison work to solicit support for the landfill operations and extension projects.

Melanie has extensive experience and professional knowledge in running Corporate Social Responsibility Programmes and Sustainability Projects including Stakeholder Engagement, Environmental Management, Community Engagement, Heritage Conservation and Sustainability Indexes and Reports in accordance to International Standards.

Melanie is a member of the Lantau Development Alliance, a member of Business Environment Council’s Environmental Social and Governance Advisory Group, member of HKSAR Sustainable Development Council and a member of the Food Wise Hong Kong Campaign. She is also an honorable mentor for the Hong Kong University of Science and Technology (HKUST) Environment Students' Society.

Bobsy​ Gaia

Founder & Ecopreneur


Born in Beirut, Lebanon, Bobsy has been pioneering socially responsible businesses in Hong Kong since 1992. As an ecopreneur, he has sought to build healthy and sustainable communities through ecologically viable food and has founded or co-founded many of the vegetarian eateries that have become the standard bearers of the health movement in Hong Kong—Bookworm Cafe, Life Cafe, and MANA!. Since the 90’s, Bobsy has been championing the on-going planting of the Lamma Forest and through ABLE Charity, which he co-founded in 1994, efforts to protect and expand the forest continue today. In 2009, his ‘Save the Human! Don’t Eat the Planet!’ campaign won the ‘Best Documentary Award’ at ISHOT HK film awards. No matter the format or the context, Bobsy’s bottom line remains the same: to live a vocation that is socially responsible, ecologically conscious, and of service to humanity and the planet.

Lucia manages all the activities of the G.R.E.E.N. Hospitality and her interest in sustainability started while studying at the university where her research revolved around the impact of tourism and the traditional food heritage. She holds a joint master degree in Tourism Management with a strong focus on ESG and creation of shared value awarded by the University of Southern Denmark, the University of Ljubljana (Slovenia) and the University of Girona (Spain). She hopes that the G.R.E.E.N. Hospitality with its initiatives and strategic partnerships can create a roadmap for innovative and sustainable practices in the industry across Asia and beyond.

Merrin is a facilitator and connector. He has a wide range of international experience working for Government Departments, SMEs, international companies and NGOs in stakeholder engagement roles, quality assurance, auditing, and sustainability. He brings with him his land surveying and engineering expertise, as well as, his experience in delivering experiential leadership learning programs on sustainability. With a problem solving engineer’s mind, he is able to come up with alternative scenarios for client issues. Raised on a dairy farm in New Zealand, he grew up loving the outdoors and animals, and loves living in a rural village on Lantau Island in Hong Kong where he can walk dogs amongst free roaming cows and buffalo.

Being the Warehouse Manager of Soap Cycling, Mr. Mo is responsible for organizing the warehouse to increase safety and productivity, handling soap/bottle collections from hotel partners and distributions to charities, and managing the flow of volunteers from all sources. He is also tasked to supervise the MEY (美) workers, establish and improve every aspect of the program from recruitment, training, marketing, and productivity.

Amelie Tan

Amelie joined CDP in April 2018 as Project Officer for corporate engagement in Hong Kong and Southeast Asia. In her role at CDP, she focuses on liaising with companies, investors and partners in the region, and working to champion CDP's initiatives with regional stakeholders to drive the mission of mainstreaming corporate environmental disclosure in shifting market capital towards a low-carbon economy. Prior to joining CDP, Amelie spent approximately 10 years in the hotel industry, accumulating experience across front-of-house operations and marketing functions. Her most recent position was digital marketing manager for Pan Pacific Hotels Group in Singapore.

The G.R.E.E.N. Hospitality Conference is hosted by Soap Cycling with the financial support of the Environment Bureau's Sustainable Development Fund and in partnership with The Foundation for Shared Impact and the Faculty of Business and Economics of The University of Hong Kong (HKU)


Soap Cycling was founded in 2012 as a charity organization that collects single-use soap bars from hotels in Hong Kong, to be reprocessed and distributed to disadvantaged communities which lack access to sanitary resources. Soap Cycling is devoted to youth empowerment and community engagement by providing these members of the community with practical and meaningful work experiences, and exposure to social responsibility.


Soap Cycling has grown its hotel partnership network to over 80 in Hong Kong, and more than 100 hotels overseas. Since 2017, Soap Cycling has added bottled hotel amenities to its recycling program, and the MEY Program has also been introduced as an empowerment initiative for disadvantaged youth and elderly by providing them with employment opportunities with a fair wage.
